  • eggs
    • farm fresh > organic > store
    • omega-3 eggs with at least 200 milligrams of omega-3s per egg are tastiest
    • eggs are still fit for consumption three to five weeks after the sell-by date
    • use good eggs for egg-forward dishes; eggs in cakes etc. have little impact on taste
  • eggs, scrambled
    • two servings: 4 eggs, 1 egg white, 2 tablespoons cream, pinches of salt and pepper, griddle half tablespoon butter in 8″ pan
  • seasoning
    • cold mutes flavors sensed by tongue
    • grind > bought grind
