Mama Betty’s Tex-Mex Cantina is what happens when a Houston Tex-Mex pedigree meets a generous pour and a feed-everyone-like-family philosophy. Mama Betty’s is named for Betty Carrier, who managed several Ninfa’s in Houston (and is the patron saint of mothers who operate under a strict “Whatever It Takes” doctrine), and Mama Ninfa Laurenzo, who opened the original Ninfa’s in Houston in 1973, introducing the United States to fajitas. Jason Carrier, Betty’s son, also worked at Ninfa’s in Houston (note the family portrait on the entry wall in front of Ninfa’s) and launched the first Mama Betty’s on Parmer Lane in March 2022, with Burnet Road now hosting the second location. The restaurant is run by Carrier5 Hospitality, the same folks behind Dizzy Rooster, Chuggin’ Monkey, and Dogwood. In other words, these people know how to throw a party and keep the chips coming!

Mama Betty’s delivers exactly what the lineage promises: puffy chips, tasty salsa, good margaritas, and portions that assume you skipped lunch and possibly breakfast. House-made tortillas are the headliners, followed closely by brisket and shrimp enchiladas, queso flameado, diablo-style quesadillas, and fajitas that set the tradition. The posole deserves special mention: seared carnitas and hominy living in peaceful, flavorful harmony. And the Bride loved the tortilla soup, stating that “I’d come back for that,” the closest thing to a Michelin star for the Allandale Neighbor.

Vegetarian, pescatarian, and gluten-free options keep everyone happy, kids are welcome, and the vibe is friendly and relaxed. There’s a bar and outdoor seating with plenty of screens to watch the Cowboys lose, as well as more intimate, date-centric seating. The spot is brand-new and purpose-built, so it’s really nice, with upscale yet accessible vibes. And the staff are as friendly as a warm tortilla. Mama Betty’s doesn’t reinvent Tex-Mex—but it reminds you why Ninfa’s became legendary in the first place.
